A Journey to the Top of the Akashi Kaikyo Bridge and the Sustainable Sake Project “Meguru”
〔Event held on Sunday, December 14, 2025〕 Welcome to the Meguru Project / A journey exploring delicious cycles that withstand global warming / Experience the new terroir charm showcased by Hyogo and Kobe, the holy land of sake and wagyu beef. Sake exports are expanding, and its popularity as a versatile accompaniment to various cuisines is growing. However, the rice used as its raw material, like other crops, is significantly impacted by global warming. Born from the shared vision of seven farmers, seven breweries, and the Kobe Shimbun newspaper to “continue producing delicious sake,” Meguru emerged amid growing climate crisis awareness. By creating a local resource cycle, this sake revives soil capable of nurturing robust sake rice while demonstrating and expanding a new sustainable, decarbonized production model. Meguru's cycle begins with dairy farmers engaged in renewable energy initiatives. They use biogas, produced by fermenting food and agricultural waste, for hot water, cutting fossil fuel use in half. Simultaneously, they cultivate the premium sake rice Yamada Nishiki using “digestate,” an organic fertilizer rich in beneficial microorganisms. On these fields, where chemical fertilizers and pesticides are drastically reduced, soft, fertile soil regenerates. Some farmers have even halved the energy required for rice cultivation by reducing mechanized work. Seven breweries then brew “Meguru” using this Yamada Nishiki rice. When many people drink Kai, it helps spread: ① Solutions to food and agricultural waste problems ② Creating fertile soil resilient to global warming ③ Rice farming that reduces fossil fuel use On the tour, after enjoying the view of the Seto Inland Sea from the main tower of the Akashi Kaikyo Bridge—a symbol of Japan's precise and reliable manufacturing—we visit Fuku Nishiki, one of the seven Meguru breweries, for a brewery tour and lunch. In Kita Ward, Kobe City, we visit Yuge Farm, a dairy farm involved in a biogas project supplying digestate. Finally, enjoy a Kobe Beef dinner at Hotel Kitano Plaza Rokkoso.
