A Journey to the Top of the Akashi Kaikyo Bridge and the Sustainable Sake Project “Meguru”
[Events held on Sunday, October 12, 2025, and Sunday, December 14, 2025] Welcome to the Meguru Project / A journey exploring delicious cycles that withstand global warming / Experience the new terroir charm showcased by Hyogo and Kobe, the holy land of Japanese sake and Kobe beef. While Japanese sake exports are expanding and its popularity as a versatile accompaniment to diverse cuisines grows, the rice used as its raw material is increasingly affected by global warming, much like other crops. Meguru was born from the shared vision of seven farmers, seven sake breweries, and the Kobe Shimbun newspaper: “To ensure delicious sake continues into the future.” By creating a resource cycle within the region, this sake revives soil capable of nurturing robust sake rice while demonstrating and spreading a new sustainable, decarbonized production model. Meguru's cycle begins with dairy farmers engaged in natural energy initiatives. They use biogas, produced by fermenting food and agricultural waste, for hot water, cutting fossil fuel use in half. The resulting digestate, rich in beneficial microorganisms, serves as organic fertilizer for cultivating the premium Yamada Nishiki rice. On these fields, where chemical fertilizers and pesticides are drastically reduced, soft, fertile soil regenerates. Some farmers have even halved the energy required for rice cultivation by reducing mechanized work. Seven breweries then brew Meguru using this nurtured Yamada Nishiki rice. When many people drink Kan, it helps spread: ① Solutions to food and agricultural waste issues ② Creating fertile soil resilient to global warming ③ Rice farming that reduces fossil fuel use The tour begins with enjoying the view of the Seto Inland Sea from the main tower of the Akashi Kaikyo Bridge, a symbol of Japan's precise and reliable manufacturing. Afterwards, participants tour the brewery and have lunch at Fuku-nishiki, one of the seven Kan breweries. Next, visit the “Kai” rice fields of the Toyokura Town Agricultural Cooperative—Japan's first recipient of the “Salmon Safe” certification, one of America's leading eco-labels endorsed by 900 farms on the West Coast and global companies like Nike—and interact with the farmers. In Kobe's Rokko Mountains, we visited Yuge Farm, a dairy farm involved in a biogas project supplying digestate.
